Cistierna is situated on the eastern mountain of Castille and Leon and has 3.243 inhabitants. Its climate is warm and temperate with an annual average temperature of 11ºC. It was a frontier between Cantabrians and Asturians during protohistory whereas in the Roman era it was the center where the minerals of the mines of the River Esla were extracted.

In the nineteenth century Cistierna will become one of the most important municipalities of Castille and Leon and the main headquarters of the municipality of Sabero, which used to be an important place because of the coal of Hulleras, which was why the railway La Robla-Valmaseda was created.

Nowadays it is a modern but also a quiet place where we can visit, for example, the Hermitage of San Guillermo (Saint William), where a small altarpiece dating back to the seventeenth century guards the wooden icon of the Saint. The beautiful place where the Hermitage is make it a place in Cistierna really worth visiting. Another place to visit is the Church of Santa Maria, which used to be a hospital.Nowadays it has been converted into an Exhibition Center of paintings, sculptures and photos.

In the local cuisine of Cistierna we can find delicious dishes such as a stew made with local ingredients such as soup made of chickpeas, three different kinds of cured meat and beef, among other ingredients.

Cured meats, such as cecina, tocino, chorizo and morcilla are very important in Cistierna, due to the existence of so many herds of pigs in the area. Another very valuable culinary product of Cistierna is the local cheese.
